Vietnam Japonica Rice
1. Description
Japonica rice is a short-grain Japanese rice variety, sometimes called Sinica rice, which is one of the two major rice varieties in Asia. It is widely grown and consumed in China, Japan, South Korea, and Taiwan. In Vietnam, Japonica rice is primarily cultivated in the provinces of Dong Thap and An Giang.
2. Characteristics:
- Appearance: Round, regular, smooth, pearly white grains with a delicate and gentle aroma.
- Cooking Quality: When cooked, Japonica rice becomes white and sticky, retaining its flexibility even when cooled. This makes it a staple in Japanese meals.
- Nutritional Content: Japonica rice has higher adhesion than other rice types due to its higher amylopectin content. It mainly contains glucose, lipids, protein, sugars, vitamins, and minerals.
