Vietnam Jasmine Rice
1. Description
- Vietnamese Jasmine rice is a high-quality, long-grain, white, and aromatic variety of rice.
- It is predominantly cultivated in Southern Vietnam, Thailand, Cambodia, and Laos. Known for its moisture content, Jasmine rice cooks up soft with a slightly sweet flavor. The grains are fragrant and slightly sticky when cooked, though less sticky compared to glutinous rice (Oryza sativa var. Glutinosa) due to lower amylopectin levels. Fragrant rice is about three times more flexible than American long-grain rice.
- During harvesting, the long stalks are cut and threshed. The rice can then be kept as paddy rice (unhusked), dehusked to produce brown rice, or further processed through milling to remove the hulls, germ, and bran, resulting in white rice.
