To ensure the best quality of Vietnamese matcha products, our staff will harvest tea leaves after covering them to avoid sunlight for about 20 days. Due to the lack of sunlight, the chlorophyll in the tea leaves will increase and make the tea leaves have a darker color, a sweeter taste, and retain more nutrients (especially antioxidants).
After that, the tea leaves will go through many stages of steaming, drying, blow-drying, separating the veins, etc., and then finely ground into a powder by Japanese grinder to become matcha green tea powder.
Matcha tea processing line in the FGC factory that is imported from Japan
At the FGC factory, we use the most unique and modern technology to produce matcha. We use the Japanese synchronized lines to cover all stages in the production. It maintains the perfect taste and aroma like Japanese green tea powder, however, it can help to increase the production capacity and volume.
We follow strict standards to meet the highest requirements for matcha products. Our stages of making Vietnamese matcha include:
Fresh tea leaves – Washing – Cutting – Steaming – Cooling (by wind blowing) – Drying – Rolling & Removing the stems – Drying – Cutting & Shaping – Sieving – Tencha – Grinding – Screening – Matcha powder
The Vietnamese matcha production process is described in the following:
- Growing tea trees: The most important thing is that FGC controls the tea growing process to ensure tea leaves will not have pesticide residues. Complying with VietGAP & Organic standards, the use of fertilizers and pesticides must be carefully recorded to ensure the safety of health before harvesting.
- The tea-growing area is covered with a darknet about 20 to 30 days before harvesting to reduce 90% of sunlight, causing the tea leaves to produce chlorophyll with high intensity, making the tea leaves greener and sweeter than usual.

Tea leaves are covered before harvesting
- Harvesting & washing: The best tea leaves are picked manually by our skilled farmers. Tea leaves are then passed through washing machines to remove the remaining soil or dust.
- Cutting: Clean tea leaves are cut according to standard size.
- Steaming: Tea leaves will be streamed at high temperatures to inhibit the fermenting process and retain the full bright green color. The tea steam process takes about 15-20 seconds. It must be done early within 4-8 hours after the tea buds are picked from the branches.
- Cooling and drying tea: Tea buds are gently cooled by circulating air distributed evenly to dry slowly.
- Drying: The tea leaves are dried in a large dryer. At the drying step, they must be dried slowly without increasing the temperature too high.
- Cutting: Dried tea leaves are cut to make the size of leaves smaller, easier to pass through the next dryer, and vibrating sifter.
- Rolling: Tea leaves are blown through a rolling machine to separate the stems and leaf veins.
- Drying: They are then dried the second time to the required temperature.
- Cutting & shaping: Raw materials are cut to smaller and expected sizes.
- Screening: Screening through a machine to completely remove the stems. After some next steps of the vacuum sorter to separate leaves and stalks, Tencha is collected.
- Grinding: Tencha is milled by an automatic mill line in a cool room with temperature and humidity are strictly controlled 24/7 to maintain the green color of Vietnmese matcha.
