- Sucralose is produced by ive chlorination of sucrose in a multi-step synthesis process, which replaces the hydroxyl group of sucrose with chlorine atoms. This is achieved by ive protection of a primary alcohol group, followed by chlorination of the partially acetylated sugar with an excess dechlorinating agent, and then removal of the acetyl groups to give the desired sucralose product
