Vietnamese Fresh Fruits, IQF-based Fruits and Freeze-Dried Fruit Powder

Freeze-dried fruit powder is performed under the method of applying modern technology to create fruit powder from fresh fruit. First, fresh fruit pieces are quickly frozen at -40°C or lower to turn the water in the fruit into ice crystals. Then, they will be put into the freeze-drying chamber, the air pressure is reduced to low and the temperature is increased slowly to evaporate the water from the frozen fruit pieces without heating the product. When the freeze-drying process is completed, these fruit pieces will be ground into fine powder by an industrial powder grinder.
