At Minh Duc, we have perfected a signature recipe combining salt and ash for 28 to 35 days. This meticulous ageing process allows the yolks to achieve a rich, savory, subtly salted profile with a delightfully moist, oil-rich texture. Post-curing, the eggs are thoroughly washed before passing through an automated cracking and separation system to extract the pristine yolks. The yolks are then re-washed, oil-coated, thermally dried, and weight-sorted into precise grades ranging from 10g to 15g.
